Utensils Required: Baking sheet, skillet.

Ingredients:

2 sweet potatoes

1 tablespoon olive oil

1 can (15 oz) chickpeas, rinsed and drained

1 cup spinach

1/4 cup chopped onion

2 cloves garlic, minced

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional Ingredients: Feta cheese, avocado, tahini sauce.

Preparation Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Pierce sweet potatoes with a fork and bake for 30-40 minutes, or until tender.

  3. While sweet potatoes are baking, heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.

  4. Add garlic, chickpeas, spinach, cumin, smoked paprika, salt, and pepper. Cook until spinach is wilted.

  5. Cut sweet potatoes in half and fluff the flesh with a fork.

  6. Stuff sweet potatoes with the chickpea mixture and serve.
