Ingredients:
1 block (14 oz) firm tofu, crumbled
1 tablespoon olive oil
1/4 cup chopped onion
1 bell pepper (any color), diced
1 cup spinach
2 tablespoons nutritional yeast
1/2 teaspoon turmeric
Salt and pepper to taste
Optional Ingredients: Mushrooms, tomatoes, avocado, hot sauce.
Preparation Instructions:
Heat olive oil in a skillet over medium heat. Add onion and bell pepper, and cook until softened, about 5-7 minutes.
Add crumbled tofu, spinach, nutritional yeast, turmeric, salt, and pepper. Cook, stirring occasionally, until tofu is heated through and spinach is wilted.
