Utensils Required: Skillet, spatula.

Ingredients:

  • 1 block (14 oz) firm tofu, crumbled

  • 1 tablespoon olive oil

  • 1/4 cup chopped onion

  • 1 bell pepper (any color), diced

  • 1 cup spinach

  • 2 tablespoons nutritional yeast

  • 1/2 teaspoon turmeric

  • Salt and pepper to taste

  • Optional Ingredients: Mushrooms, tomatoes, avocado, hot sauce.

Preparation Instructions:

  1. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, and cook until softened, about 5-7 minutes.

  2. Add crumbled tofu, spinach, nutritional yeast, turmeric, salt, and pepper. Cook, stirring occasionally, until tofu is heated through and spinach is wilted.

  3. Serve immediately.
